Mushroom burgers with onion chutney

These delicious vegetarian burgers
have just 104 calories and 1.7 grams of fat each, fitting in perfectly with
your diet plan! Serve them up on a whole-wheat bun with some salad for a yummy,
healthy meal the whole family will love.
What you’ll need
- 250g mushrooms, finely chopped
- 2 large onions, finely sliced
- 1 small egg, beaten
- 2 carrots grated

2 cloves garlic, finely chopped

2 tbsp balsamic vinegar

2 tsp tomato paste/puree

4 tbsp breadcrumbs
(This recipe makes 4 serves)
Directions

Heat a large non-stick pan with 4 tablespoons of water. Add the mushrooms
and garlic, and sauté until the water has evaporated. Remove to cool.
- In a pan over low heat, cook the
onions in the vinegar and 2 tablespoons of water for about 10 minutes, then
remove to cool.
- Mix the carrots, tomato puree,
breadcrumbs and eggs in with the mushrooms. Shape the mixture into four
patties. Leave to cool for around 15 minutes.
- Fry the patties until done. Then
serve up as you like, with the onion chutney on top!
