Coconut, oatmeal and raisin cookies

These yummy cookies are only 41
calories each- so you can indulge in a few with your tea without feeling too
guilty! Whip up a big batch and keep them for when you need a tasty treat…
What you’ll need…
- 1 cup
quick oats
- 3/4 cup flour
- 1 cup shredded coconut
- 1 cup raisins
- 1/2 tsp cinnamon
- 1 egg
- 1/2 cup
unsweetened applesauce

1/4 cup white sugar

1/4 cup brown sugar

1 tsp baking powder
-
1 tsp vanilla extract
(This recipe makes 40-50 cookies)
Directions:

Preheat
the oven to 180 degrees C and prepare a baking tray.

Mix
all the dry ingredients in a bowl.

Beat
the egg, then add into the mixture. Stir in the applesauce and vanilla extract.

Shape
into balls and place on the baking tray.

Bake
for 10 to 12 minutes until golden brown.
