Mushroom burgers with onion chutney

These delicious vegetarian burgers have just 104 calories and 1.7 grams of fat each, fitting in perfectly with your diet plan! Serve them up on a whole-wheat bun with some salad for a yummy, healthy meal the whole family will love.

 

What you’ll need


  • 250g mushrooms, finely chopped
  • 2 large onions, finely sliced
  • 1 small egg, beaten
  • 2 carrots grated
  • 2 cloves garlic, finely chopped
  • 2 tbsp balsamic vinegar
  • 2 tsp tomato paste/puree
  • 4 tbsp breadcrumbs

(This recipe makes 4 serves)


Directions

  1. Heat a large non-stick pan with 4 tablespoons of water. Add the mushrooms and garlic, and sauté until the water has evaporated. Remove to cool.
  2. In a pan over low heat, cook the onions in the vinegar and 2 tablespoons of water for about 10 minutes, then remove to cool.
  3. Mix the carrots, tomato puree, breadcrumbs and eggs in with the mushrooms. Shape the mixture into four patties. Leave to cool for around 15 minutes.
  4. Fry the patties until done. Then serve up as you like, with the onion chutney on top!
