Looking for a new Indian recipe to mix up your diet plan? Give
this delicious chickpea curry a try! Each serve has less than 180 calories- and
chickpeas are full of protein, so they’ll keep you feeling satisfied.
What you’ll need…
1 can chickpeas, drained
1 large onion, chopped
1 large tomato, chopped
5 cloves garlic, finely chopped
1 cup water
5 teaspoons curry powder
1 1/2 teaspoons ground ginger
1 teaspoon cumin
1/2 teaspoon salt
1/8 teaspoon black pepper
Pinch of oregano
1 tablespoon olive oil
(This recipe makes 4 serves)
Directions
Sautee the onion in the olive oil until translucent.
Add the garlic and cook for one minute. Then stir in the
ginger and curry powder, and cook for another half a minute before removing
from heat.
Mix in the chickpeas, salt, pepper and cumin. Add the water
and stir to mix.
Returning the pan to heat, add the oregano and tomato, and
cook for 2 minutes. Continue to stir while cooking.
Leave to simmer with the pan covered until the tomatoes are cooked. Keep
stirring.
Remove the lid and cook until desired thickness.
Serve and enjoy with rice, naan, or whatever you like!
