Mushrooms stuffed with spianch and cheese

These delicious stuffed mushrooms make a great healthy meal for any time of day. Each serving has just 78.6 calories, with 5.6 grams of carbs and 4.5 grams of fat, so you can serve it up with a salad, or even some rice for a nutritious and filling meal, without the guilt. 

What you’ll need…

  • 6 large stuffing mushrooms
  • 280 grams chopped frozen spinach
  • 1/2 cup cheddar cheese
  • 2 tsp. parmesan cheese
  • 1/2 onion, diced
  • 1 clove garlic, diced
  • 1/4 tsp. paprika
  • 1/4 tsp. coriander
  • 1 tsp. olive oil
  • Salt and pepper to taste

(this recipe makes 6 serves)

Directions

  1. Preheat the oven to 180 degrees C. Clean and hollow out the mushroom caps and place on a large baking tray.
  2. Saute the onions and garlic in olive oil over medium heat until soft.
  3. Add the spinach and parmesan and mix well.
  4. Add the cheddar cheese, then reduce to a low heat and mix.
  5. Sprinkle in the paprika, coriander, salt and pepper.
  6. Remove the mixture from heat, and spoon it into the mushroom caps.
  7. Bake for 20 minutes and serve!
