These delicious stuffed mushrooms make a great healthy meal

What
you’ll need…
6 large stuffing mushrooms
280 grams chopped frozen spinach
1/2 cup cheddar cheese
2 tsp. parmesan cheese
1/2 onion, diced
1 clove garlic, diced
1/4 tsp. paprika
1/4 tsp. coriander
1 tsp. olive oil
Salt and pepper to taste
(this recipe makes 6 serves)
Directions
Preheat the oven to 180 degrees C. Clean and hollow out the
mushroom caps and place on a large baking tray.
Saute the onions and garlic in olive oil over medium heat
until soft.
Add the spinach and parmesan and mix well.
Add the cheddar cheese, then reduce to a low heat and mix.
Sprinkle in the paprika, coriander, salt and pepper.
Remove the mixture from heat, and spoon it into the mushroom
caps.
